Canada's "Queen Of Breakfasts" Expands In Markham

Former single-mother-turned entrepreneur Cora Tsouflidou, regarded as Canada's "Queen of Breakfasts", is officially opening its doors in Markham next week. On the morning of Monday, December 11th, 2006, at 9:00 a.m., the grand opening ceremony will be held at the restaurant located at 3760 Highway 7. "This is an exciting time for us," comments Madame Cora, President and CEO of Cora Franchise Group Inc. and founder of the successful franchise chain that has won numerous food and hospitality awards, and was recently named one of Canada's 50 Best Managed Companies. "This is a fantastic development for Cora's restaurants. With the opening of the Markham restaurant, we now have 84 restaurants in eight provinces. This is our ninth restaurant opening in GTA over the past six years. All of the different cities in Ontario have warmly welcomed us in their communities. The people have positively responded to our concept; even exceeding our expectations. The fact that we can share our great breakfast concept, create jobs and support young entrepreneurs makes us very proud." Famous for its all-day breakfast fare that boasts mounds of fresh fruit artfully prepared by on-site specially-trained "fruiters", Cora's Breakfast & Lunch menu specializes in fruit, cheese, cereal, crepes, omelettes, pancakes, waffles and French toast. Over the years, inspired by family traditions, health trends, customer requests and suggestions from her children, Cora has conjured up more than 100 menu ideas � most of which still today bear the names of the customers or family members who inspired her.

Madame Cora originated the concept in 1987 when, as a single mother of three in need of a career, she bought a small abandoned snack bar on C�te-Vertu Boulevard in Montr�al's St-Laurent area focusing solely on breakfasts � fresh fruit, cheeses, cereal, omelettes, cr�pes and French toast. The restaurant quickly became the talk of the town, often having line ups to get in, and Madame Cora's astute entrepreneurial instincts told her that this was a concept that could be franchised.

Today, the Cora's restaurant chain includes fifty-five restaurants in Quebec; sixteen in Ontario; three in New Brunswick; four in Nova Scotia; one in Prince-Edward Island, one in Newfoundland, two in Manitoba and one in Calgary. The restaurants operate as Chez Cora in Qu�bec and Cora's Breakfast & Lunch in all other provinces.
